Chef Tauchi brings his 40 years of Japanese culinary experience to Virginia’s first sake brewery and cult favorite ramen shop
CHARLOTTESVILLE, VA (Friday, May 1, 2026) – In 2018, Andrew Centofante opened North American Sake Brewery, Virginia’s first and only sake brewery in the heart of downtown Charlottesville. After falling in love with sake on his trips to Japan, Andrew began brewing in the states and quickly built a reputation for crafting high-quality and award winning sake. In 2023, Bad Luck Ramen was born from the popularity of ramen being served in the tasting room. Since then, their culinary program has continued to evolve as they leaned deeper into their appreciation for Japanese craft and cuisine.
Today they are excited to announce that beloved Chef Yoshihiro Tauchi has joined the Bad Luck Ramen team as Executive Chef. Chef Tauchi brings 40 years of Japanese culinary and restaurant experience to the table adding to an already strong team led by Kitchen Manager Jake Pugh. He is eager to apply his expertise to hone and perfect authentic bowls and creative interpretations of Japanese cuisine in the already bustling ramen and sake shop.
“My goal is to create a moment that cannot be repeated – shaped by the guest, the ingredients, and the time we share.” Chef Tauchi declared.
His culinary journey did not start in Tokyo’s elite kitchens, though. Instead, it began in the grit of a New York fish wholesaler, where he hauled tuna crates and mastered the fundamentals of cleaning scraps. It was here that he crossed paths with Take-san, a master chef steeped in Japan’s finest traditions, who mentored him in the true essence and discipline of sushi.
Recruited by a fish purveyor to launch a sushi program in the south, what was intended as a brief assignment eventually became his life’s work. He joined the inaugural team at TEN Restaurant, where he was instrumental in establishing its sushi identity from the very beginning.
Stepping further into his mastery of flavor profiles, cultural nuances and the true meaning of hospitality, Tauchi opened his own Japanese establishment, Mican, right on Charlottesville’s own downtown mall. After some time running his own shop, he took the unconventional step of assuming leadership at a Thai restaurant, Lemongrass. His journey eventually led to becoming the culinary mind behind Omakase Obscura in 2024, an intimate sushi experience that showcased his true artistry and talents. With its sudden closure in 2026, he began looking for a home that could support his creativity and align with his ethos and roots.
Today, he is focusing his craft at the intersection of traditional Japanese spirit and modern American creativity at Bad Luck Ramen. He is firmly rooted in Charlottesville, the community that has become his second home, alongside his loving wife Yukiko, who has also joined the team as his right hand. She brings her charm and unwavering hospitality, alongside some mean knife skills.
The team at North American Sake and Bad Luck Ramen could not be more excited to welcome their talents and experience to the mission. The process so far has involved a deep look at technique as the team dives into their approach to ramen and other Japanese cuisine.
