💬 “Real Magic is where I cut my teeth. This sake is actually based off of the first recipe I developed way back in 2016 when I was brewing sake in my basement. This was the style that I iterated on continually, trialing different techniques and learning the intricacies of the sake brewing process. Batch after batch, each with slight variations, each closely monitored and notes poured over. Thinking deeply about each step and wondering how the changes will unfold. Questions led to more questions but at the heart if it a deep sense of wonder. The process has always been nothing short of magic to me. Rice and water, yeast and koji coming together to create such beautiful and deep flavors.
