How to make a cocktail with sake

The Sake Cocktail Framework:
1. Start with the Sake
What kind of sake will you be using? This decision has the single greatest impact on the steps that come ahead. Are you using a junmai daiginjo sake? Best go with minimal additives to not overwhelm it’s delicate flavor profile. Skip to the cheat sheet below to see the most common sake types and pairing suggestions.
2. Decide your Intent
Do you want to highlight, balance or transform the sake?
To highlight: choose flavors that echo and support the characteristics of that sake, without overpowering the sake’s character. Does your junmai sake have strong melon notes? Add a little honeydew juice! But leave the strong flavors out. See complementary flavors by sake type in the cheat sheet below.
To balance: choose flavors and ingredients that contrast the sake’s core flavor. Is your nigori sake very sweet? A little acidic citrus harmonize the sweet/sour balance. Or maybe add a little spice!
To transform: connect different flavors that are less likely to be found together in the wild – this is the fun part! Use bitters, teas, tinctures, or even food infusions to tie unusual elements together. Add a little at a time to see how the flavors interact. Lapsang tea and honjozo? Why not! Try it out.
3. Mind the Mouth Feel
Depending on the variety of sake, your final cocktail could have a wide range of textures. If you’re mixing with a cloudy nigori style sake, the rice particles suspended in the sake will create a luxurious creaminess, which can play very well with fatty elements, like olive oil or coconut cream!
4. Account for ABV
When making of cocktails, we’re almost always using distilled spirits – sake is not that, and must be treated accordingly. The ABC of sake hovers anywhere between 14-20%, but most commonly its about 15%. This means that to get the same buzz from sake cocktails, you’re gonna need about double the volume, which will certainly reinforce its flavor in your cocktail as well. If you’re being intentional about drinking less though, sake is your best friend. By using the same ratios and volumes as traditional cocktails, you’re effectively cutting the amount of alcohol you consume in an evening by half!


Sake Cocktail Recipes
Here’s some inspiration for the next time you want to impress your dinner guests:
White Peach Spritz
Gently lift and complement the elegance of junmai daiginjo without overpowering its delicate floral and fruity notes.
- 2 oz Serenity Now! Junmai Daiginjo sake
- 0.5 oz white peach purée (or syrup)
- 1 oz soda water
- Lemon zest (garnish)
Method:
Build over ice in a stemmed glass. Stir gently. Garnish with a lemon twist or edible flower.
Why it works: The peach echoes the sake’s fruity top notes, and soda adds brightness and lift without dilution of flavor.
Cucumber Shiso Highball
Balance the slightly fruity and aromatic profile of junmai ginjo with cooling, crisp, and herbal elements.
- 1.5 oz Olympus Junmai Ginjo sake
- 0.75 oz dry vermouth
- 2 slices cucumber
- 1 shiso leaf (or mint if unavailable)
- 2 oz tonic water or sparkling water
Method:
Muddle cucumber and shiso lightly in a shaker. Add sake and vermouth with ice, shake gently, and strain into a tall glass over fresh ice. Top with tonic and garnish with another cucumber slice or shiso leaf.
Why it works: The vermouth and shiso bring balance and structure to the sake’s fruit, creating a refreshing aperitif-style drink.
Smoked Miso Old Fashioned
Reinterpret a classic using the rich umami depth of junmai sake, layered with savory and smoky components.
- 2 oz Real Magic Junmai sake
- 0.5 oz miso-honey syrup (1:1 honey and water infused with white miso)
- 1 dash smoked bitters (or regular bitters + a touch of Lapsang Souchong tea)
- Orange peel (garnish)
Method:
Stir all ingredients with ice until chilled. Strain over a large cube in a rocks glass. Express orange peel over the top and drop in.
Why it works: This drink transforms sake into a spirituous-style cocktail by mimicking the depth of whiskey with umami and smoke, while still showcasing the sake’s body and rice character.
